Apple Raisin Barley
This dish will definitely be making it into your regular rotation from now on once you try it. The flavors blend so well. The apples and raisins mellow as they soak with the barley so that they’re flavorful but not sweet. It's just wonderful! Plus, I think with a few modifications and substitutions this will make a really good winter morning breakfast too.
- Combine all ingredients in a rice cooker and set the rice cooker on the “rice setting”. (If you’re using the stove just be aware that It might take 40+ min on a low simmer covered on the stovetop. You will also need to continually check the bottom of the pot to avoid burning the food).
- Remove from pot when the barley is soft and serve as desired.
- Beware, your house will smell amazing.
