Pitta Bread

Ingredients

  1. In a small bowl, mix yeast, ½ cup warm water and sugar together
  2. Allow yeast to activate for 10 minutes
  3. In a large bowl, combine flour, salt, yeast mixture and remaining cup water
  4. Mix together with a fork, then knead with hands on a floured surface
  5. Place back into bowl and cover with towel
  6. Let rest for 1 hour
  7. Place rack on lowest rungs in the oven
  8. Preheat oven to 260 degrees,celsius (heat baking pan on lowest rack)
  9. Remove dough from bowl
  10. Place on a floured surface, knead dough for 1 minute
