Sweet Potato, Courgette & Walnut loaf Recipe
- Chop all ingredients into desired shapes
- Heat 1 1/2 oil in a saucepan. Stir fry the chopped vegan walnut loaf and garlic clove until the walnut loaf has soaked in the garlic flavour
- Use the remaining oil to oil a baking tray
- Mix all ingredients (including stir fried walnut loaf pieces) and place them into the tray
- Cover up the tray with a cling film or baking lead and bake for 30-45 minutes @180 degrees
- Remove ingredients from tray and serve as desired
